Sauerkraut Eintopf “Ueckermünde”

I made a soup following the first recipe I stumbled upon for which I had some of the ingredients. I must say, I partly share the careful attitude towards natural resources, and therefore I try not to throw food away unnecessarily. Without fanaticism, of course. It just so happened I had some sauerkraut, and so I decided to cook this kind of German shchi. By the way, different people understand the words shchi and borscht differently. To me, shchi is a soup made from sauerkraut. And borscht is a soup made from cabbage with beets. I love both.

Eintopf is a specific German dish, representing a thick soup with meat, smoked meats, sausages, or other meat products, which replaces a two-course lunch.
Ein is one, topf is a pot. So eintopf translates to "everything in one pot". They are especially good in winter.

It turned out very tasty, although I didn't add flour (for lack of it), but I did add peppers — a hot chili and a bell pepper. Anyhow, it's hard to ruin a soup, and you can put a lot into it. Incidentally, I make all my soups very thick, they practically turn out like stews. And here it's supposed to be like that according to the recipe, so I found a very fitting dish.

I won't be adding flour in the future, though — or it'll turn out American-style, and I don't like their soups at all. I was also wary of adding celery root — I really disliked a salad with it once. But in a soup, in a reasonable amount, it hit the spot, and it wasn't overpowering, it just added aroma. And even raw, as it turns out, it's quite edible. In general, since I started cooking for myself, I've started eating a lot of things I absolutely couldn't stomach before. Keep this up, and I might even get to eggplants. Zucchini, however, is the final bastion — I absolutely detest their aftertaste.

The only problem with all these goodies is that they're unhealthy and caloric, especially considering I've been successfully losing weight, albeit slowly. And now, since I'm temporarily not going to the pool and not playing wii fit, the progress will halt. And to top it off, I bought some onion bread at Iki, and apparently dieters are supposed to eat bread very rarely. But I couldn't resist — it just went too perfectly with the soup.
